For the most prestigious and closest option, there's Le Relais Bernard Loiseau in Saulieu. This is the flagship establishment of a group that includes Loiseau des Vignes in Beaune, Loiseau des Ducs in Dijon, and also in Saulieu, Loiseau des Sens (with a spa) and Loiseau du Morvan.
